Vegan Chocolate Chip Walnut Pancake Recipe

I love breakfast more than any other meal of the day, especially if it involves lots of laughs, pancakes and good coffee.

These chocolate chip walnut pancake recipe is easy to make and fully plant-based. They are perfectly fluffy, chocolaty and sweet enough to want seconds.

Here’s my secret recipe:

Batter

  • 2 tbsp. coconut sugar

  • 1 cup flour

  • 2 tbsp. coconut oil (for frying)

  • 1 tsp. baking powder or baking soda

  • 1 cup almond milk + 1 tbsp. lemon juice (this is a vegan buttermilk recipe)

  • 1/4 cup chocolate chips

  • 1/4 cup walnuts

  • 1 tsp. vanilla extract

Sauce

  • 1 tsp. coconut oil

  • 1.4 cup creamy peanut butter

  • 1 tsp. vanilla extract

Process:

Combine all batter ingredients and mix thoroughly. Turn stove on to medium heat and add coconut oil to a pan until fully melted. Scoop batter and fry each pancake until golden brown. I like to leave them a bit uncooked so they don’t dry up. It’s about 2 to 3 minutes each side. For the sauce, add all ingredient to a pan and melt in medium heat until a saucy consistency forms. Serve warm.
