These chocolate chip walnut pancake recipe is easy to make and fully plant-based. They are perfectly fluffy, chocolaty and sweet enough to want seconds.
Here’s my secret recipe:
Batter
2 tbsp. coconut sugar
1 cup flour
2 tbsp. coconut oil (for frying)
1 tsp. baking powder or baking soda
1 cup almond milk + 1 tbsp. lemon juice (this is a vegan buttermilk recipe)
1/4 cup chocolate chips
1/4 cup walnuts
1 tsp. vanilla extract
Sauce
1 tsp. coconut oil
1.4 cup creamy peanut butter
1 tsp. vanilla extract
